[Previous entry: "Good Question from Melanie"] [Main Index] [Next entry: "Easy Spooky Scary Treats"] 09/06/2001 Entry: "Blown Sugar Bubbles" Well, here goes the main reason for this column. Two customers came into the store today and asked if I knew how to do blown sugar bubbles as seen on a Martha Stewart wedding cake. Not knowing how this was exactly done, I told Nadia and Marcie that I would do my best to find out. Guess what - after searching for instructions here on the net - I have yet to come up with the answer. Guess that good old Martha likes to keep some things to her self. If any of you out there know the answer to this please email me (ajcake@aol.com) and bring me up to speed. Thanks for asking Nadia and Marcie - hope we get some answers

As for the wooden tube for blowing, this is ridiculous. You need a metal tube so you can heat it up and pull it out of the sugar bubbles, or heat it up and get the left over sugar off with out wasting it.

Hello, Posted by Lucy @ 08/14/2003 01:08 PM PST What is a spirit burner? I checked them out on ebay and they look like a tea pot. Where can I purchase one (a new one, not on ebay)? Also where can I purchse a wooden straw? You can either answer on this page or fax me at 618-467-0942. Thank You, Donna Posted by Donna @ 07/26/2003 06:36 AM PST What is a spirit burner? And where do you buy them? Posted by Donna @ 07/25/2003 08:52 PM PST
I replicated the Martha cake a couple of years ago and continue to use a variety of colored and flavored bubbles for my cakes. My wooden straws w/ attached air pumps were handmade by a guy near S.F. CA. Posted by Shelley @ 06/05/2003 07:48 AM PST For more information about pulled sugar you can search by sugar art or www.pastrywiz.com. Its show you how you can do it and what kind of equipment you need. Its the same technique for bubbles. You can create your own design. Be careful, its very hot and you can be burned. Try to do roses its a great idea and the master creation its to do a swan. We didn't have a wooden straw, but we did have the heavy plastic covers that our thermometers came in and we used those - and they worked great. Theoretically a heavy pen (minus the ink) cover would also work. Posted by Chaz @ 04/18/2003 03:25 PM PST
Where do you find that wooden straw????? Posted by chris @ 04/06/2003 06:23 PM PST How long approxiamately do you need to let the melted sugar cool beefore being able to handle it to make to sugar bubbles? Posted by Lori @ 04/05/2003 11:31 AM PST I have found the recipe for blown sugar bubbles it is at www.recipecottage.com then here it is
3lbs. of granulated cane sugar bring to a boil and add 8 drops of tartaric acid. boil until it reaches 314F. pour onto a marble slab or a large silpat sheet. when cool enough to handle, pull off balls marble to golf ball size, depending on the size of the bubble you want. attach to the end of a wooden straw and blow. twist the bubble and melt the end shut with a spirit burner and cut away with scissors. your welcome Posted by Courtney @ 04/01/2003 07:31 PM PST Ahh, yeah. I'm also interested in having that cake made for my wedding. I live in Lansing MI and have yet to find a bakery or anyone with any knowledge on how to make them :( Posted by Christine @ 02/16/2003 03:45 PM PST I have also been intrigued by this cake. The link above did not respond for me but I did find a recipe at www.recipecottage.com If anyone knows how to do this please e-mail me. Posted by Jane Allen @ 01/04/2003 02:40 PM PST
Hello. I am interested in the same cake also. I have found a recipe!! It is in Arielle's Recipe Archives, go to candy and blown sugar will come up or type in: Good Luck, I am going to start practicing now for my wedding next September. Posted by Amy Schlereth @ 12/14/2001 04:10 PM PST I found the page on the Martha Stewart site that explains how the blown sugar bubbles are made. It says that the technique is difficult, but it does offer a basic description of how it's done.
